Gadzooks!

Move over Rachael Ray, 'cuz your 30 minutes are up, beeyotch! Chickenlips has got yer quick, easy and delicious recipe right here, how does 15 minutes from start to finish sound? Plus my voice is a lot less grating, if I do say so myself.



Ok, here is my recipe for Zucchini Frittata.



Ingredients:

1 med. zucchini, sliced

1 clove garlic, minced

2 green onions, sliced, or 1/4 cup chopped onion

1 tablespoon olive oil

3 eggs

Pinch of dried basil and oregano

salt and freshly ground pepper to taste

1/4 cup freshly grated Parmesan

Preheat broiler. In 10" ovenproof skillet, heat oil over medium heat. Saute vegetables until zucchini is tender but still firm, about 5 minutes. Beat eggs in small bowl and add herbs, salt and pepper. Pour mixture into skillet. Cook by lifting egg mixture around edges, letting uncooked portion flow underneath. When egg mixture is almost cooked but still wet on top, sprinkle Parmesan over top. Place under broiler for 3-5 minutes, or until mixture is puffy and light golden brown. Slide onto warm plate. 1 to 2 servings.

Thank you for playing, everybody! "The Trees" definitely got the most votes, but quite a few were for "Ghost Rider" and "Closer to the Heart". I've decided to keep all three of them as regular colorways in my line. "Xanadu" was the least favorite, but I sold a skein of it the other night--to a knitter who had her little girl in tow, and she wanted her mommy to make her something out of it. So it turns out that might be a good colorway for kids' items. I may dye some skeins in that colorway a few months down the road, rotate some in and out--just to keep things interesting.

Off to skein up a buncha yarn for next week's dyeing...

That fritatta looks good! i love Rachel but boy, does she never cook low cal/fat. (but then that is why it tastes so good!)
 
Wow, you just gave me a good idea. I make a lot of vegetable egg white omelets and I'm always looking for different veggies to insert. I love zucc.
 
Wow, that fritatta looks good enough to eat! I'm with you about the Rachael Ray voice--very grating. I cringe every time she says "E-V-O-O." And the man-hands are a little creepy too! :P

I'll forgive you for not awarding me yarn...this time :)
 
Hmmm. I wonder if I could convince the kids the zucchini slices are green pepperoni.
 
Thanks for the recipe. Do you have any other fast and simple recipes that kids will eat? It's one of my New Years resolutions to find more easy recipes.
